Broth :
In a pot, bring the water and vegetable stock cube to a boil. Pour it all into a blender. Add almond butter, tomato paste, vinegar, salt, garlic, oregano, thyme, pepper, and sriracha sauce.
Blend everything until well combined and set aside.
Pour olive oil into a hot pot, and sauté the chopped onions and carrots for about 4 minutes over medium-high heat.
When the onions become translucent, add the chopped garlic cloves and sauté for about 1 minute.
Add the broth, crushed peeled tomatoes, chopped fresh spinach leaves, and chopped basil, and bring to a boil.
Add the tortellini and cook according to the package instructions.
And there you have it, your tortellini soup is ready!
Observations
We recommend using a pot to make this recipe; a large saucepan will suffice but won't be as practical ;-)
