Cream of spinach soup


Ingredients

- Spinach: 1 cup
- Onion : 1
- Tomato: 2
- Ginger : 2''
- Garlic : 1 pod
- Milk: 1/2 cup
- Heavy Cream : 1/2 cup
- Salt : 1 tsp
- Jaggery/Sugar: 1 tsp
- Cumin Powder : 1 tsp
- Fussili Pasta: few
- Water : 1 cup

Preparation

Step 1

Wash and roughly chop the spinach, onion, tomatoes, ginger and garlic. Boil all the ingredients in water. Let it cool down and make a smooth puree in a blender.

Step 2

Put the spinach puree on a low heat and gradually add milk and cream to get the desired consistency of the soup.

Step 3

Add one tsp of salt, cumin and jaggery and some fussili pasta and simmer for 5 minutes. Serve it with butter and pasta on top of it.
