Pea gnocchi without eggs: ready in no time!
Made with a few simple ingredients and without the use of eggs, these gnocchi are a lighter alternative to traditional potato gnocchi. We have prepared them with frozen peas so it will be possible to bring them to the table all year round. Not only is this recipe suitable for those on a vegan or egg-free diet, but it is also a tasty choice to vary your menu with a twist. Season them with your favorite sauce!

Preparation
Heat a drizzle of olive oil in a frying pan. Add frozen peas and cook at 6 minutes over medium heat, stirring often. Once cooked, season with salt and pepper and mix well.
Blend the cooked peas, then pour the puree into a bowl and let it cool.
When the pea puree is cold, incorporate the flour a little at a time, starting to mix with a fork.
When the dough begins to have a good consistency, transfer it to the floured work surface and continue to incorporate the leftover flour, kneading well.
Form into a ball.
Cut the ball into 5 parts.
Form "sausages" by stretching each cut piece of dough (choose the thickness you like best).
Cut into pieces to form pea gnocchi.
As the pea gnocchi are ready arrange them in a floured tray. You can cook them right away and season them with different toppings.
Observations
How long can I store pea gnocchi?
A couple of days in the refrigerator in an airtight container.
Can I freeze pea gnocchi?
Yes. Place in the freezer directly on the tray and once the gnocchi are hard transfer them to the freezer bags. Remember to cook them in boiling water while still frozen.
Can I use fresh peas?
Sure. If it is pea season you can use them fresh to make vegan gnocchi.
How big should pea gnocchi be?
The size of the gnocchi depends on taste. We don't recommend making them too big otherwise the middle part may remain raw after cooking.
How to season pea gnocchi?
You can choose the sauce you like best; they go well with any kind of seasoning. Try a mushroom sauce, a fresh tomato sauce or butter and sage.
When to add flour to make pea gnocchi?
We recommend that you let the pea puree cool completely before incorporating the flour.
