Ripe Banana Fritters ~ Malaysian style

Today for the 6th day of the marathon...Here is another restuarant recreation....and an yummy one that is....
Whenever we go to downtown Boston, we prefer going to the Malaysian restuarant in China town. Its a whole new atmosphere when we enter. We usually go for dinner so, never can we come out with out having dessert.
One of the best dessert I have eaten is their Fried Icecream with is served with Fried Banana Fritters. I have eaten fried icecream in other places before, but this is the one I like, its because they use a batter to dip the icecream and then fry it. The same batter is also used for the bananas and they taste just heavenly! We love it a lot!
Well how do you fry your icecream?....I think its probably not possible at home...or if it is please let me know and I would love to try it out. But me and the kids even love the banana fritters too, so I decided to atleast try out the banana fritters.
But for the fried ripe banana fritters...the banans should just be perfect. Do not use over ripe bananas. The bananas should be ripe with no spots and should be firm.
When I was searching for the recipe, I found many which used eggs...I haven't tried it with out egg, but will try soon. I followed the recipe to the "T", only lessened the amount of salt used. The texture came out perfect, just as I wanted!! It was totally worth it!...
Everyone enjoyed them!...Eat them hot or warm...cos they tend to soften when they get cold!

Ingredients:
1 cup all purpose flour
2 tsp baking powder
1/2 to 3/4 tsp salt
1/4 cup sugar
1 egg, well beaten
1/3 cup milk
2 tsp melted shortening
2 firm yellow ripe bananas, cut into pieces
Oil for deep frying
Icecream or frozen yogurt to serve with
Method:
Whisk AP flour, baking powder, salt and sugar together.
Melt vegetable shortening.
Beat the egg well.
Combine egg, shortening and milk together.
Combine this with the dry ingredients.
Cut the bananas into fours or even smaller.
Heat oil to the point that when the batter is dropped, it comes up quickly, in a second that is.
Dip the bananas in the batter and drop into the oil.
Remove when brown onto a paper napkin. It will happen very quickly...not more than 20 - 30 sec.
Serve hot with icecream or frozen yogurt.
Drizzle with chocolate syrup on it if you wish. Or dust with powdered sugar.
