Preparation
Bring the water to the boil in a large saucepan.
Slowly add the cornflour, stirring all the time.
Cook over a low heat until it thickens, stirring constantly (about 15 minutes). Season with salt and pepper to taste. At the end of cooking, add a little butter and Parmesan cheese (optional). Mix in.
Pour the polenta into a greased pan (ours was silicone). If you prefer, add a little olive oil on top to prevent it from drying out. Leave to cool completely (about 2 hours).
Cut the polenta into sticks or squares.
Distribute them in the Air Fryer basket, without overlapping. Spray with oil. Bake in Air Fryer mode for 15 to 20 minutes at 390°F/200°C(or until golden brown). Turn halfway through. If desired, sprinkle with Parmesan in the last 5 minutes.
It's ready. Before serving, sprinkle with more parmesan. Enjoy.

How long does fried polenta keep in the Air Fryer?
It's best to serve it while it's still hot, as soon as it comes out of the Air Fryer. If you have leftovers, let them cool, wrap in plastic wrap (or place in an airtight container) and refrigerate for up to 3 days. To reheat it, use the Air Fryer or your oven.
Can I make other shapes for the fried polenta in the Air Fryer?
Absolutely. The best known is rectangular, but cut it into squares, for example, and serve it in salads or as a snack. There is also the round option, which can be served as a side dish.
