Broccoli and mushroom soup

Number of serving: 3

For the stock:

1 tbsp salted butter

2 sticks of celery - cut into pieces

1/2 ( about 80g) carrot - cut into pieces

1 large onion - quartered

1/2 liter of water

Other ingredients:

300g broccoli - cut into florets

200g button mushrooms - sliced

5 garlic - chopped

5 shallots - chopped

2 spring onions - sliced

3 tbsp oil

pepper and salt to taste


  • Heat butter and fry all the ingredients for the stock for a couple of mins.
    Add 1/2 litre of water and simmer for 1 hour.
    Drain and keep aside.
    Into the heated oil, fry shallots and garlic for about 2-3 mins.
    Add stock and salt to taste.
    Once simmering, put in broccoli.
    Add button mushrooms when broccoli becomes half cooked.
    Continue to simmer for another 3-4 mins.
    Off heat and add pepper to taste.
    Serve while piping hot with garnishing of spring onions.
