- Heat butter and fry all the ingredients for the stock for a couple of mins.
Add 1/2 litre of water and simmer for 1 hour.
Drain and keep aside.
Into the heated oil, fry shallots and garlic for about 2-3 mins.
Add stock and salt to taste.
Once simmering, put in broccoli.
Add button mushrooms when broccoli becomes half cooked.
Continue to simmer for another 3-4 mins.
Off heat and add pepper to taste.
Serve while piping hot with garnishing of spring onions.
