Cabbage and groundnut salad

Ingredients

3 servings
- Cabbage or Lettuce- 1 medium sized

- Roasted Groundnuts- 400 g

- Green chillies- 2

- Salt- to taste

- Lemon juice- of 1 lemon

- Olive Oil or Salad Oil- 1 teaspoon

- Coriander Leaves- 100 g

Preparation

Step 1

Chop the cabbage into bite sized pieces.

Step 2

Grind the groundnut, green chillies and salt together coarsely.

Step 3

TAKE CARE not to grind it fine- it spoils your salad.

Step 4

In the salad bowl, put in the chopped cabbage, add the groundnut mix, add chopped coriander leaves, lemon juice and toss well.

Step 5

Sprinkle Olive Oil or Salad Oil.

Step 6

Toss and serve immediately.
