Clemenquat salad

5 clementines, peeled with pieces separated

10-15 kumquats, sliced into disks

5 celery stalks, chopped

2 handfuls of walnuts

3 juice of ½ lemon

1-2 tablespoon extra virgin olive oil

salt + pepper to taste


  • Mix the clementines, kumquats, celery and walnuts in a medium sized salad bowl.
  • In another bowl whisk together lemon juice and olive oil, add desired amount of salt and pepper.
  • Dress salad with dressing, garnish with fresh parmesan cheese and serve.
