Mini spinach and goat's cheese puff pastries
We all agree that everyone here is a fan of puff pastry ;-) With this recipe for mini spinach and goat's cheese puff pastries, you're bound to be a hit as an aperitif, or as an appetizer simply accompanied by a salad. Whether it's for the festive season or any other event, we love to offer our guests puff pastries, and these ones are sure to get the whole family eating spinach ;-)

Buckwheat galette spinach and goat cheese
Preparation
- Preheat oven to 350°F (180°C).
Wash and drain the spinach, then pan-fry with olive oil, salt and pepper for 5 minutes over medium heat. - Meanwhile, mix the goat's cheese, egg, cream, salt and pepper.
- Mix well.
- When the spinach has cooled, chop coarsely with a knife.
- Add the chopped spinach to the previous mixture.
- Cut the puff pastry into 9 pieces (it's best to have a rectangular pastry, but if like us you don't have one, cut the scraps off the edges which you can reuse to fill the puff pastries at the end!)
- Place the squares of dough in the greased muffin tins.
- Pour the spinach and goat cheese mixture into each mould.
- Fold over the edges of the pastry, sealing as much as possible, then brush with beaten egg yolk (we added sesame seeds for decoration, but this is optional).
Bake at 350°F (180°C) for 25 minutes on a fan oven setting. - And now your puff pastries are ready! :-)
Observations
Can I use frozen spinach for this recipe?
Yes, you can replace fresh spinach with frozen spinach. Just be sure to drain it well after cooking, to prevent too much water from being absorbed into the preparation.
Can I use goat's cheese instead?
Of course you can! You can use ricotta or cream cheese to vary the flavours.
How can I prevent puff pastry from becoming soft?
To prevent the puff pastry from becoming soggy, make sure the spinach is well drained before mixing with the cheese.
How do I store these mini puff pastries?
Store in an airtight container in the refrigerator for 2 to 3 days. To reheat, place them in the oven to regain their crispness.
Can puff pastries be prepared in advance?
Yes, you can prepare the puff pastries the day before and store them in the fridge before baking them the same day. If you prefer, you can also freeze them before baking and put them directly into the oven frozen.
