Cut the beef into thin strips. Mix the soy sauce, sesame oil, sesame seeds, honey, ginger, and the cut beef. Cover with plastic wrap and refrigerate for 2 hours.
Cook the marinated beef for about 5 minutes in a hot pan, then let it cool.
Cook the rice vermicelli in boiling water for 4 minutes, then drain and let cool.
Peel and cut the carrots into strips using a peeler. Cut the lettuce. Soak the rice wrapper in warm water for about 10 seconds.
Place the beef strips at the edge of the rice wrapper, then add the carrots, followed by the rice vermicelli, and finally top with the lettuce.
Fold the edge of the wrapper over the filling, then fold in the sides and roll the spring roll.
And there you have it, your marinated beef spring roll is ready! Dip it in nuoc-mâm sauce!
Observations
Spring rolls are best consumed quickly (preferably on the same day). You can wrap them in plastic wrap before refrigerating.
