Curried Chickpeas Over Quinoa

Sweet Girl had her dance pictures at 7:15 the other night - they took forever!!  By the time we got out it was so late I was hoping Hubby was home getting dinner together so I didn't have to think about it.  No such luck - he decided to work (very) late that night.  So I had to throw together dinner and I had no plan, not to mention it was late so I didn't want anything heavy.  I started emptying the fridge and cooking everything that needed to go not thinking about paying attention to the recipe because this was not going to be special at all.  Well, turns out it was very special!  I am going to attempt to recreate this recipe for you because I thought it was great.  Sweet Girl actually told me it was the best meal we had all week (that's not saying much, it was a week of leftovers - but still.)  Enjoy!!


I apologize for my measurements


What you need (approximately)
1 onion, chopped
3 carrots, chopped
1/2 zucchini (that's what I had in the fridge -use more if you like) chopped
3 garlic cloves, minced
a few handfuls of spinach
1 can of chickpeas, drained
1 tablespoon tahini (I think - I just poured some in - you can omit this if you want)
a bunch (sorry- I literally threw it together fast) of Cumin, Curry Powder, Salt and Pepper


What you do:
Saute veges until soft
Add chick peas and saute for a few minutes
add spices and cook for a minute or two
 Add tahini (if using)
If it seems really dry add a splash of chicken broth
Add spinach and cook until wilted.
Serve over
