Eggs n Potatoes Curry
After almost a week out of town, I am back with a post! Here is a curry that has two of my favourite ingredients: eggs and potatoes. This is definitely one of those “comfort curries” that you can cook for your family or yourself when you are in need for a quick curry. Ingredients: Eggs: 4 hard-boiled Potatoes: 2 skinned and diced Onion: 1 large diced Ginger Paste: 1 tbsp Garlic Paste: 1 tbsp Green chillies: 2 Tumeric Powder: 1/4tsp Cumin Powder: 1/2 tsp Coriander Powder: 1 tbsp Chilli Powder: 1/2 tsp Garam Masala: 1/4 tsp Coconut milk: 3/4 cup Salt to taste Oil Coriander – freshly chopped for garnish Saute the onions, green chillies, ginger and garlic paste in some oil. When the onions go brown, mix the masala powders in some water: tumeric, cumin, coriander, chilli, and pour into the pan. Cook this till the spice mix cooks through and gets aromatic. I cooked the potatoes in the microwave for a few minutes and tossed it into the pan. Add 1 cup of water, the coconut milk and cook on medium heat. After a couple of minutes, I added the garam masala and salt and mixed well. I made slits on the eggs and placed them in the curry. I made sure they were immersed, so the curry goes into the eggs. I let this simmer for a few minutes and garnished it with some coriander. Serve this with some steamed rice. related searches : Eggs
