Start your day off with a healthy muffin! These simple but delicious blueberry oatmeal muffins make a great breakfast or a late morning snack!

Ingredients
1 cup whole spelt flour (or whole wheat flour)
1 cup oatmeal
1 cup organic vanilla yoghurt
1/4 cup tagatose sweetener (or 1/2 cup brown sugar)
1 egg
1/4 cup soy margarine, melted
1/2 teaspoon baking powder
1/2 cup blueberries, fresh or frozen
Method
Preheat the oven to 200°C. Mix the oatmeal with yoghurt and let it soak in the fridge for about 25-30min. In a bowl mix flour, tagatose and baking powder. Add egg and soy margarine and the oatmeal mixture. Mix until well combined. Gently stir in the blueberries. Pour the mixture into paper-lined muffin tin or silicon muffin cups. Bake for about 15-20 min until tops are brown!
