Ham, Mushroom and cheese omelette…
The old ones are often the best, and tonight – the plan was for a light dinner – I made an omelette with what I had left in the fridge. I did it more along the lines of a single decker ‘Spanish’ omelette, rather than the ‘folded over’ French variety. Ham and cheese always go well together – and mushrooms are always nice. I added some chopped frozen garlic which Waitrose sell – an excellent idea and very authentic to intensify the flavour. 4 eggs whipped …the whole thing took about 2 minutes to make and was just what the doctor ordered. Served with the rest of the salad. I had some red wine left from last night….a little ‘aged’ now (aka – ‘rough’) which set it all off nicely. I have tried for your fascination and mine to establish the origins of the word Omelette, but largely failed. The most plausible definition I found is that it is the mis-analysis of an old french word ‘alumelle’…meaning a thin plate, but frankly, if you think about it, an egg…well, being an egg…if did not take a brilliant cook to experiment, and so I am quite sure someone somewhere stumbled on an omelette before those pesky Frenchies bagged it as another one of their dubious inventions….! The best omelette I have ever had was one called Oeufs Arnold Bennett…which is a bit of a faff to make with the addition of a Bechamel sauce at the end, but is a rather wondrous invention. Arnold Bennet was an English author who wrote heavy novels about the ghastly industrial wastelands of our country around the Midlands. God, I have rather rambled on rather tonight…..bit bored !
