Nilagang Baboy: Boiled Pork with Vegetables
It`s been sunny the past few days, temperature raised to 30C and today it starts raining. And one of the perfect dish to eat when its raining is nilagang baboy actually bulalo is another, sadly we can`t find beef bone marrow, however we found large chunk of pork bones in the market, so there goes our nilagang baboy story. Last night, while I was quietly thinking on what to cook for today (and just as I have decided..) few minutes after, hubby suddenly blurted " I`ll guess what you`ll be cooking tomorrow", and I challengingly looked at him... then he said " nilagang baboy"., and again, his correct.. We really have that thing, perfectly guessing each other`s thoughts..maybe because we are one..oh too mushy..Hubby enjoyed his lunch, and kept on telling me that his been thinking about it the whole morning. Now Ill be thinking what to cook later... Ingredients: pork bone marrow (optional) 150g pork (spare ribs or your choice cut) 1 whole onion, chopped in quarter 1 tbsp whole peppercorns 2 pcs potatoes, chopped in quater bunch of bok choi/chinese cabbage/pechay handful of spring onions, chopped salt (we don`t have fish sauce here, if you have use it instead) pork broth cubes (optional) 3 to 5 cups water or rice water Procedure: 1. Boil rice water, add onions, peppercorns, pork and broth cubes. Let it simmer until pork is tender 2. Add potatoes, let it simmer until its cook 3. Add spring onions and bok choi, cover pot in a few minutes and serve hot hot hot. Make some calamansi with fish sauce as dipping sauce.. and since we dont have both of them.I made my own.. 3 tbsp of our nilagang baboy soup, 1/4 tspsalt and drops of lemon juice..
