Non-fried crispy Chicken
Non-fried version of the fried chicken. It's crispy and crunchy from the outside and soft from the inside. Tastes really good! The secret .. it's baked, not fried. But it tastes just the same!
Ingredients 4 skinless chicken breasts 1 1/2 cup plain yogurt beaten really well or buttermilk 2 garlic cloves, finely minced 1 teaspoon black pepper 2 tablespoon Dijon mustard 1/2 teaspoon hot pepper sauce (Tabasco or any hot sauce) 1 1/2 teaspoon salt 1 teaspoon red chili powder (or as per taste) 1/2 teaspoon Mrs Dash seasoning 4 cups of bread crumbs 1 cup corn flakes, coarsely crushed 2 teaspoon oil Preparation 1. In a bowl, whisk the yogurt (or buttermilk), mustard, hot sauce, half teaspoon of each - salt, garlic and black pepper. 2. Add chicken and turn all over to coat. 3. Refrigerate this mix for 1 hour. 4. Heat oven to 400F. 5. Prepare a mixture of crushed corn flakes, bread crumbs, Mrs Dash seasoning, red chili powder and the other half of salt, garlic and black pepper. Stir in oil and mix well. Put this on a deep dish plate. 6. Remove chicken from marinade and dip it in the crumb mixture. Press the chicken so that the crumbs stick. 7. Coat a cooking rack with some oil. Place chicken on rack and bake at 400F for 50 minutes. 8. Insert a fork in the thickest part of chicken. If it comes out clean then it's done. 9. Serve hot with mashed potatoes on the side. Notes: 1. A marinade of buttermilk or yogurt can be used. 2. Seasonings can be adjusted as per taste. 3. Double dip the step 6 for a more crunchier effect. related searches : Non
