Taco-Bell-Style Cheesy Fiesta Potatoes Burrito Recipe

I miss Taco Bell for so many yrs now and just wen they opened in India (Bangalore) i had to move here and surprisingly there is no sight of it anywhere in the UK! altho m sure the indian version wud b indo-mexican for sure, still waitin to get bak n try it! Mexican food is not something u fall in love with at first sight/taste, in fact the first time i stepped into a taco bell i hated it! it takes a lot of gettin used to esp for the indian palate, but hell i wud die to find a mex restaurant nearby anytime now.. n brat loves it too, so almost every other day we have either tacos or bean burritos for dinner.. (yes its exceptionaly easy to make too :P)! Anyways without further blah, here is our all time favourite potato burrito made with typical taco-bell style cheesy fiesta potatoes, right at home!

Taco-Bell-Style Cheesy Fiesta Potatoes Burrito Recipe


Ingredients
Flour Tortillas - 3 or 4 (Can use wheat too)
Nacho Cheese Sauce - 1/2 cup (velveeta/cheddar or any other cheese you prefer)
Potatoes - 2 medium sized
Tomatoes - 2 medium sized
Lettuce - handful (optional)
Onion- 1 small sized - better with spring/green onions (optional)
Garlic powder - 1/2 tsp
Cumin powder - 1/2 tsp
Paprika - 1/2 tsp
Salsa - 4 to 5 tbsp
Sour Cream - 4 to 5 tbsp
Butter - 1 tbsp
Olive oil - 2 to 3 tsp
Salt and pepper to taste



Method
Peel and cube the potatoes, toss along with oil, garlic and cumin powders.
Bake in a preheated oven or microwave for about 10 minutes.
In a pan, add oil and butter and fry the half-cooked potatoes along with paprika, salt and pepper.
Melt the cheese in microwave/ conventional oven.
Dice the tomatoes, chop the lettuce and onions.
Heat the tortilla on a flat-bottom pan, fill in with the potatoes, melted cheese, salsa, tomatoes, lettuce and onions and finally the sour cream, and roll into a burrito.

If you feeling greedy, you may add some refried beans too!
