The art of Italian cooking: tagliatelle with mushroom-and-chestnut sauce

We suggest two variations to increase this pasta flavor. 1) Add 100 to 150 g (3 1/2oz to 5 1/4oz) fresh sausage to the ingredients together with the aromatic herbs and substitute orange juice with white or red wine. 2) Brown the shallot and mushrooms in olive oil in which you have added a bit of butter too.
