There are good recipes, and then there are the ones that run out before you can even sit down. The ones you bring to the table and within minutes all that's left are crumbs and someone asking if there's more.

Over the years I've realized that it's not just a matter of taste. There is something more. A mix of simplicity, fragrance that comes before the plate, and that feeling that makes you reach out without thinking about it too much. And yes, seeing a dish disappear so quickly is one of the greatest satisfactions in cooking.


Why do some dishes have this effect?

It doesn't happen by accident. Dishes that really work have definite characteristics.

They are easy to eat, without too much formality. They have contrasts that are immediately striking, crispy outside and soft inside, warm and creamy together. And then there's that "comfort" side that takes you back to something familiar, but with an added twist.

One example I make often: baked feta with sun-dried tomatoes and olives. Very simple, but as soon as it hits the table, everyone comes over. After a while only the smell remains.
