Apple and almond pie - tarte normande

Make a homemade pie crust, add almond custard and put some apples on it. You have the perfect dessert !

- Pie crust :
Put softened butter + icing sugar + vanilla sugar + salt + almond powder in a bowl. Mix with a wooden spoon. - Add the egg and mix it all.
- Add the flour, and mix using your hands to form a ball. Caution, don't knead more than necessary, you just have to get a smooth dough. Wrap the dough in some plastic foil and flatten it a little. Put in the fridge for 1 hour (if you put it as a ball, it will take longer to chill).
- Quickly knead the dough to loosen it, then put it on a floured table.
Roll it out.
- Roll your pastry around the pin, then unroll it on the pie pan, previously greased. Press on the edges to make it stick. Sting the bottom with a fork and refrigerate 30 min.
- Filling :
Whisk eggs + sugar + vanilla sugar. Add almond powder and cream and whisk again.
- Clean and peel apples then cut in halves, removing the center. Cut fine slices. Put the apple halves on the pie crust and extend. Try to make a flower with apples.
- Pour the filling on the apple and bake 30 minutes at 370°F (190°C).
- Leave to cool down and sprinkle some icing sugar and grilled flaked almonds on top.
- There you are !
