To make the compote :
Peel and cut 4 apples in pieces, put them in a pot, and add the vanilla sugar and a little bit of water.
Put on medium heat, and leave to cook, stirring sometimes, until the apples have melted down. Take the pot out of the heat.
Put the pastry in a pie dish, and sting it with a fork.
Spread the compote made earlier.
Peel and cut the remaining apples in slices, and arrange them on the compote in circles.
Sprinkle with brown sugar, and bake 30 minutes at 360°F (180°C).
