Impossible to miss: this express "cheesecake" is making the rounds on TikTok and Instagram, and it's easy to see why... All you have to do is stick a few cookies (here we opted for Biscoff speculoos) in some Greek or skyr yoghurt, smooth the yoghurt over the top... then let the fridge do the rest. After a few hours, the cookies soften just right and you get a creamy texture, a bit like cheesecake ;) It's quick, economical and perfect when you're in the mood for a gourmet dessert without having to get out the salad bowl. Prepare in the morning for the evening (or leave overnight for the more patient), and customize endlessly with fruit, coulis or a little chocolate. Simple, effective... and downright addictive!

Mix the yoghurt with the vanilla extract (you can add the flavour of your choice or leave it out).
Plant cookies in the yoghurt (directly in the pot or in a bowl). Chill for at least 2 hours.
If you'd like to keep a little crunch, allow the cookies to protrude, otherwise plant them entirely.
