Ahhh, flan: this delicious and comforting dessert reminds us of our childhood and Sunday meals at our grandparents' house :-) At Ptitchef, we were all hooked on the classic, ultra-creamy vanilla flan, but that was before we tried this chocolate version! We guarantee you'll find it impossible to have just one slice ;-) Follow the steps of this recipe below ↓

1 shortcrust pastry
7 oz chocolate
2.5 cups whole milk
1 cup cream
2/3 cup sugar
3 eggs
1/2 cup cornstarch

Place a sheet of baking paper in the bottom of the mold and grease the edges of the mold. Cut out a disk of dough the diameter of the mold and place it in the bottom of the mold.
Cut strips the height of the mold from the rest of the dough and place them on the edges of the mold in contact with the bottom disk of dough.
In a saucepan, add the milk, cream, and chocolate. Heat over medium heat, stirring with a wooden spoon until the chocolate has melted.
Put the eggs in a bowl, add the sugar and cornstarch, and mix well.
Pour the egg, sugar and cornstarch mixture into the saucepan, mixing well, and cook over medium heat until thick.
When the mixture has thickened, pour it into the pastry-lined pan and smooth the top.
Bake in the oven at 350°F (180°C) for 1 hour. Cover with a sheet of aluminum foil if it cooks too much on top. Once cooked, let cool then leave in the fridge for at least 3 hours, ideally overnight.

Which pastry should you use?
We used shortcrust pastry, but puff pastry works perfectly too. You can also use flaky pastry.

Which milk should you use?
We recommend whole milk rather than semi-skimmed milk; the flan will be even creamier.

Which dark chocolate should you choose?
For chocolate lovers, 70% baking chocolate is a good choice. Dark chocolate with 50% cocoa is also very good.

Milk or white chocolate?
You can also use white or milk chocolate for variety and a milder chocolate flavor. In this case, we recommend using only 100 g of sugar in the recipe, as these chocolates are sweeter than dark chocolate.

How should I store my chocolate flan?
You can keep your flan in the refrigerator for a few days.
