Ultra creamy chocolate flan
We love this delicious and comforting dessert that reminds us of our childhood. At Petitchef, we were all addicted to the classic ultra creamy vanilla flan, but that was without having tried this chocolate version! We guarantee that it will be impossible for you to take just one slice ;-) Follow the steps of this recipe step by step below ↓

Preparation
- Place a sheet of baking paper in the bottom of the mold and grease the edges of the mold. Cut out a disk of dough the diameter of the mold and place it in the bottom of the mold.
Cut strips the height of the mold from the rest of the dough and place them on the edges of the mold in contact with the bottom disk of dough. - In a saucepan, pour the milk, cream and add the chocolate. heat over medium heat and melt the chocolate while stirring with a wooden spoon.
- Mix together eggs and sugar then add cornstarch and mix well.
- Pour the egg, sugar and cornstarch mixture into the saucepan, mixing well, and cook over medium heat until thick.
- When the mixture has thickened, pour into the mold and smooth the top.
- Bake in the oven at 350°F (180°C) for 1 hour. Cover with a sheet of aluminum foil if it cooks too much on top. Once cooked, let cool then leave in the fridge for at least 3 hours, ideally overnight.
- There you are, your chocolate flan is ready!

Decorating tip:
For a more gourmet version, you can grate chocolate shavings before serving.
Which dough to choose?
We used shortcrust pastry but puff pastry is also perfect. You can also use shortcrust pastry.
Which milk to take?
We recommend whole milk rather than semi-skimmed, the flan will be even smoother.
What dark chocolate to choose?
For chocolate lovers, 70% baking chocolate will be the good option. Dark chocolate with 50% cocoa is also very good.
Milk or white chocolate?
You can also use white chocolate or milk chocolate for variety and a less strong chocolate taste. In this case we recommend that you only put 1/2 cup (100 gr) of sugar in the recipe, these chocolates are sweeter than dark chocolate.
How do I store my chocolate pastry flan?
You can keep your flan in the refrigerator for a few days.
