Prepare the crispy gnocchi:
Mix the gnocchi, olive oil, salt, pepper, paprika and herbes de Provence.Pour the coated gnocchi into the air fryer trays or onto an ovenproof tray.
Bake for 12 minutes at 390°F/200°C in "airfry" mode, or 20 minutes in a preheated oven.

Prepare the sauce:
Mix the yoghurt, finely chopped shallot, chopped herbs, salt and pepper.Wash and chop the cucumber and cherry tomatoes. Arrange in a dish.
Add the crispy gnocchi.
Add the sauce.
Stir to combine.
