Called "gazelle ankles" in arabic, those cute little pastries flavoured with cinnamon and orange blossom will be great with some mint tea :)

- Mix and knead all the ingredients for the dough. Form a ball, wrap it in plastic foil and put in the fridge for at least 1 hour.
- Mix together all the ingredients of the almond filling. It shouldn't be too dry, so add some orange blossom water if that is the case. Form sausage shaped little balls and put them aside.
- Once the dough has rested enough, take a little ball of it. Spread some oil on your hands, and strech out the dough finely.
- Put a ball of almond filling on it, and close it up.
- Spread some oil on your cooking table, and put it on it. Shape it as shown on the picture (or the video), and press the edges to close it.
- Cut the excess of dough using a pastry wheel.
- Arrange your gazelle horns on a baking tray, then leave them to dry for one hour.
Then, bake them for 15 minutes at 350°F (180°C). - There you are, your gazelle horns are ready!
