Grilled halibut with grilled romaine


- 2 tablespoons shallot, finely chopped
- 1 tablespoon chopped fresh oregano, rosemary, Italian parsley
- 1 teaspoon Dijon mustard
- 1 clove garlic, finely chopped
- ¼ cup good quality sherry vinegar
- ½ teaspoon ground black pepper
- 1 teaspoon salt
- ¾ cup olive oil


Step 1

Whisk all ingredients together and adjust seasoning as needed.

Step 2

Spice it up:
Add crushed red pepper flakes, minced jalapeno or other hot peppers.

Step 3

Use different vinegar such as balsamic or rice wine vinegar.

Step 4

Use different herbs:
cilantro, tarragon, chervil, chives, marjoram.
