Kfc fried rice

Ingredients

Number of serving: 4
3 rice cups (1 rice cup=180ml) uncooked rice

1 large onion - diced

3 cups mix vegetables

3-4 pieces KFC fried chicken(large pieces, preferably breast/ thigh) - shredded

2 eggs - lightly beaten

1 tablespoon sesame oil

1/4 cup Lingham's chili sauce/ hot sauce

1/4 cup tomato ketchup

Oyster sauce

1 teaspoon white pepper powder

Preparation

  • The day before, cook rice and leave to cool. Chill overnight in the fridge. Or early on the day, cook rice and leave to cool.
  • Heat up a bit of oil in a pan.
  • Add onions, cook until soft and translucent.
    Add mix vegetables, cook until softened.
    Mix in shredded chicken, cook until chicken is warmed through. Leave this aside for later use.
  • Heat up a bit of oil in a large pan.
    Add eggs.
    Mix in rice when eggs begin to set.
  • When eggs are cooked, pour in sesame oil, chili sauce, ketchup and white pepper. Mix evenly.
    Add oyster sauce to taste.
  • Mix in cooked vegetables and chicken.
    Serve.
