Recipe - maple syrup roast crown of duck

Preparation
- Pre-heat the oven to 200c. Score the skin several times over each breast.
- Massage in salt and pepper, making sure to penetrate the scores. Chuck a couple of garlic cloves into the cavity.
- Pop the bird onto a roasting grill in a roasting tray. Cook in the oven for 50 - 55 minutes, rotating the tray halfway through.
- Remove from the oven and pour over 2 - 3 tablespoons of maple syrup. Return to the oven for another 10 - 15 minutes.
- Rotate the tray halfway through again if you feel like it.
- Remove from the oven. Allow to rest for 5 - 10 minutes before carving.
