Salmon and mustard flaky crown

- Peel the onion and garlic clove and chop it all.
- Cut the salmon into slices.
- Cook the onion and garlic in a pan with olive oil.
- Add salmon + salt + pepper.
- When the salmon is half cooked, crumble it with a fork. Stir then cook for about 5 minutes more.
- Pour this mix in a large bowl. Add olives + grated mozzarella + mustard.
- Cut the puff pastry into 16 triangles.
- Place a small bowl on a baking tray with parchement paper. Put the triangles around the bowl.
- Remove the bowl and add the salmon stuffing on top.
- Close the crown : roll the puff pastry around the stuffing. Wash the top with beaten egg. Add some Provence herbs and mozzarella.
- Bake for 20 min at 350°F (180°C). There you are, your salmon crown is ready !
