Stir-fried rice noodles with red onions, bean sprouts and ginger

This is a special skipped because it combines all the ingredients and noodles are really simple.

Ingredients

Number of serving: 4
1kg fresh rice noodles

½ cup vegetable oil

4 small Red Onions cut in half and then into wedges

A bunch of spring onions cut into 5cm lengths

2 tablespoon Ginger julienne

½ cup Dark Soy sauce

4 tablespoons light Soy sauce

1 Chinese cabbage

2 cups bean sprout

2 tablespoon roasted sesame seed (optional)

Preparation

  • First boil a kettle of water and once boiled tip the water over the noodles in a bowl.
  • Leave these to sit for a moment. Heat the oil in a hot wok and stir-fry onions, shallots and ginger for 3 minutes.
  • Drain and add noodles and stir-fry for 4 minutes or until noodles begin to soften. Add combined soy sauces and stir-fry for 2 minutes.
  • Finally, add cabbage and bean sprouts and stir-fry for 1 minute.
