  • Sift the flour with the baking powder, baking soda and salt, set aside.
  • Cream the butter and sugar till light, fluffy, creamy and thick.
  • Add in eggs one @ a time, mix well.
  • On slow speed, add in the oil, mix well.
  • Next, add in the mashed bananas, lemon juice and vanilla essence, mix thoroughly.
  • Fold in the sifted flour, mix well.
  • Finally, add in the flour coated cranberries, nuts, mix thoroughly, scraping from the bottom and sides of the mixing bowl.
  • Pour the batter into a baking dish. Bake in a preheated oven @ 180 deg C for about 50 to 55 minutes. Test with a skewer till it comes out clean.
  • Cool in the dish for about 10 minutes. before removing onto a wire rack to cool completely.
