- Heat Buttermilk till lukewarm. Stir well untill the required temperature. Pour it into a large bowl and mix in the sugar,melted butter and tofu paste with a wooden spoon and keep it aside.
- Mix 1cup of flour, spices, salt and yeast in a separate bowl. Add the dry ingredients to the wet ingredients and mix with the wooden spoon till smooth.
- Add another cup of flour and mix well. Add flour little by little until the dough comes together. It will be sticky. Flour the counter, add the dough on top and sprinkle some more flour and knead well for 8 minutes.
- The dough should be on the sticky side. Add the cut fruits and knead well. Oil a bowl, place the dough inside and rotate to coat the dough with oil.
- Cover with wrap and keep it in fridge overnight. Take it out from the fridge 4 hours before working on dough.
- Punch down the dough and let it rest for 20minutes. Transfer to the counter top and shape it into a log.
- Cut it into 12 equal parts. Shape each ball into a round and arrange on a tray lined with butter paper. Keep it aside until the balls become double the size.
- Mix the ingredients given for the paste. Take it in a plastic bag. Cut the tip and pipe out cross on each bun.
- Preheat oven to 175C. Bake the buns for 30-35 minutes. Combine water and sugar given for the glaze. when it starts boiling, remove from flame and set aside.
- Brush the hot buns with the glaze and serve hot.
