Gluten free coconut carrot cookies

Ingredients

Makes about 18 small cookies
- 1/2 cup Sorghum flour
- 1/3 cup rice flour
- 1/4 cup oat flour(gluten free) you can make your own by grinding as well
- 1/4 teaspoon xanthum gum
- 3/4 teaspoon baking powder
- 1/2 teaspoon cinnamon
- dash of nutmeg
- 1/4 teaspoon salt
- 1/2 cup oats (gluten free)
- 1 Tablespoon Earth Balance + 3 Tablespoons canola oil or (just coconut oil melted)
- 1/3 cup maple syrup
- 1 teaspoon vanilla
- 2 teaspoons rice milk or non dairy milk
- 1 med. carrots, peeled and grated
- 1 cup shredded coconut
- 1/4 cup walnuts, chopped(optional)

Preparation

Step 1

Preheat oven to 375.

Step 2

In a small bowl combine flours, baking powder, salt and oats. Set aside.

Step 3

In a medium size bowl whisk together Earth balance, canola, maple syrup, rice milk and vanilla. Stir dry ingredients to the liquid ingredients until well mixed. Next stir in the coconut,carrot and walnuts. Stir until well combined.

Step 4

Use a tablespoon to drop dough on to cookie sheet. Bake for about 12 minutes.
