Simple Vanilla Cake


This is a simple vanilla cake.Whoever wants to try baking for the first time,can easily start with this.simple ingredients,no hard job,less energy and no mess :)
This can be made rich with adding mixed nuts,tutty-fruity,dry fruits etc on the top or mixed with cake batter also.this is so soft and delicious to eat without frosting.

IngredientsAll Purpose Flour 1 and 1/4 cupEgg 2 no.s Milk 1/2 cupSugar 1 cup(fine granulated)Baking Powder 1 and 1/4 tspOil (vegetable/olive/canola) 1/3 cupVanilla extract 1/2 tsp
Method
Preheat oven(convection oven) to 350 F.Line one 8 inch cake pan with parchment paper and grease the paper and sides of the pan well(using cooking spray/baking spray)Sift the flour and baking powder .In a large mixing bowl, add sifted flour and baking powder ,in a another small bowl with, an electric mixer, beat sugar and eggs together until slightly thickened,( about 1 minute)to this add milk,oil and vanilla, mix gently with a spoon and add to the flour and beat for another minute, just until the batter is smooth and creamy. Don't over beat. Pour batter into the prepared baking pan.Then Bake in Preheated oven for 30-40 minutes or until the top are golden brown and toothpick or knife poked in to the center of the layer came out clean.(for me it took 32 minutes)Loosen the sides of the cake from the pan with a thin knife, then turn out onto a rack and peel off the paper.Let it cool completely.After done ,slice it and njoy the cake ..

This basic vanilla cake can be enjoyed with butter cream frosting.I tried orange butter cream frosting.Heres the recipe:
IngredientsSoftened Butter 1/2 cupConfectioner sugar 1and 1/2 cupFresh Orange juice 2 tbspVanilla extract 1/2 tsporange zest (grated orange peel) 1tsporange food color 2 drops(optional)
MethodIn a mixing bowl,using electric mixer cream butter until light and fluffy.Beat in confectioner sugar,vanilla,orange zest and orange juice.Add enough orange juice to get desired frosting consistency.
