- A 28cm diameter pie mold
Preparation
Put the dry yeast in a bowl and add the warm milk. Leave to rest for 10 minutes at room temperature and stir.
Add the flour on top, then the salt, sugar, and eggs. Knead until a smooth dough forms.
Add the softened butter gradually and knead until the dough pulls away from the sides of the bowl (about 10 minutes).
Cover with a cloth and let rise for 2 hours at room temperature.
Transfer to a greased pie mold and spread the dough evenly across the surface of the mold. Let it rise for 1 hour at room temperature.
Make holes in the dough with your fingers.
Mix the eggs and cream. Pour this mixture over the dough. Sprinkle the brown sugar on top, then cut the butter into small pieces and sprinkle them on top as well.
Bake in a preheated oven at 340°F for 25 minutes.
