Preheat your oven to 350°F (180°C).
Moisten your tortillas with a little water (especially the edges to prevent cracking when placing them in the mold) and microwave for about 40 seconds.
Once softened, it will be easier to position them in the mold. Make sure the tortilla fits well inside the mold by pressing with your fingers.
Bake them in the oven for 8 minutes.
Meanwhile, chop your salad ingredients.
Once cooked, unmold your tortillas and let them cool before filling them.
In order, we added the baby spinach, red beans, cherry tomatoes, corn, black olives, avocado, fried onions, and chopped cilantro.
Season with a drizzle of olive oil and squeezed lemon juice.
