Lauki Kofta Curry with Palak
![]() Lauki Kofta Curry with Palak Ingredients For kofta : ?Bottle gourd ( Lauki )- 100 gms ?Potato - 100 gms ?Besan( gram flour ) - 3 tablespoon ?Turmeric powder - a pinch ?Salt - to taste ? For curry: ?Spinach - a bunch ?Garlic - 15 gms ?Ginger - 5 gms ?Onion - 50 gms ?Chilli powder - 1 teaspoon ?Desiccated coconut - 1 tablespoon ?Salt - to taste ?Coriander leaves - a spring Method For kofta: Grate bottle gourd and squeeze out water (reserve water ). Boil, peel and mash the potatoes and keep aside. Add gram flour and salt and mix with lauki. Make even sized balls and shallow fry. Keep aside. For curry: Wash, cut and boil spinach. Grind to a paste with ginger. Chop onions and garlic. Heat oil. Add chopped garlic and onions, turmeric powder, chilli powder and ground paste. Add squeezed water of bottle gourd and salt to taste. Cover with a lid and cook till the gravy slightly thickens. Gently drop koftas into gravy. Garnish with chopped coriander leaves and grated coconut.
