Pineapple Casserole and Easter Dinner Recipes

Easter is fast approaching. This recipe would be excellent to serve along side you Easter ham. It may sound a little strange, but it really is good. I discovered the recipe a while back on Cooks.com and altered slightly. I actually like to eat my ham topped with the casserole. I also have included recipes from my archives that would be great for you Easter Dinner, if you are wanting to try something new. For you ham, I always suggest the bone in kind. I think they have the best flavor.

Rolls: Molly's Rolls - this would be my preference. They take about 1 1/2 hours to make.
If you want big rolls, only make 1 dozen with the recipe instead of 2 dozen.
30 Minute Rolls - very similar to Molly's Rolls in taste and texture, but take even less time.
Lion House Rolls - these are the best rolls, but do take more time. These are also similar to Molly's Rolls in taste and texture. These rolls are easier to shape so if you want beautiful rolls that taste delicious make these.
Serve your rolls with honey butter, raspberry butter, or cinnamon butter.
Potatoes: Cheese Potatoes - I always serve these with ham.
Veggies: Sweet Carrots - This is my favorite way to make carrots. Baby carrots also work for this too.
Salad: 5 Cup Fruit Salad - This can be made ahead of time.
Luau Salad - A great creamy and fruity salad.
Macaroni Salad - Another great salad that you make ahead of time.
Laura's Potato Salad - This is great if you want cold potatoes instead of the hot Cheesy Potatoes!
Summer Spinach Salad - This is one of my favorite spinach salads.
Dessert: Basic White Cupcakes with Coconut Buttercream - you can make these and color the coconut to go on top with green food coloring. The add Easter candy on top of the green coconut like a marshmallow peep or candy eggs.
White Texas Sheet Cake - a delicious cake that will feed a crowd. You could always add some food coloring to the frosting to make a beautiful pastel color.
Marshmallow Graham Dessert - Very tasty and light dessert.
Sugar Cookie Bars - This will also make a lot and you could decorate them really cute for Easter.



Pineapple Casserole

1 (20 oz.) can crushed pineapple, undrained
1 c. sugar
5 tbsp. plain flour
1 c. grated cheese
1 roll crushed Ritz crackers
1 stick melted butter

Mix first four ingredients together and put into an 8 x 11 inch casserole dish. Sprinkle top with crushed crackers and melted butter. Bake at 350 degrees for 30-40 minutes
