Quick Fix Tomato Mix
The Quick-Fix Relish is a God send. A wonderful solution to the days we are rushed and have little time for elaborate chores. A few basic ingredients go into the making of this comfort food. It can be stored in the refrigerator for at least 2 weeks (if it lasts that much). Another way of using this mix is in a Sandwich. I'm sure we can find more permutations and combinations with this mix.
Big Onion - 1 Big ripe Tomato - 1 Ginger - 1/2" Oil - 2 Tbsp Turmerric Powder - 1/4 tsp Chilli Powder - 1 tsp Garam Masala - 1/2 tsp Salt to taste Method: Grind the onions, tomato and ginger to a smooth paste without adding water. Mix in the remaining ingredients. Take a thick bottomed vessel and cook this mixture over a slow flame, stirring often. When the mixture gives out oil, remove from heat and cool. Store in clean glass jars, in the refrigerator (upto 2 weeks). Tomato Rice with the prepared relish: Basmati rice - 1 cup Water - 1.5 cups Salt to taste Prepared relish - 2 to 3 Tbsp Corriander leaves to garnish Wash and soak rice in water for 15 minutes Cook basmati rice in 1.5 cups of water for 3 whistles and then on slow flame for 1 minute. Allow pressure to subside and cool in a plate. Mix in the prepared tomato relish. Garnish with chopped corriander leaves. Serve with Onion Raitha. Seasoning is optional - Here, I added Curry Leaves and Roasted Groundnuts (Cashewnuts). Another variation would be to add boiled Green Peas and Kasuri Methi. Here, you have to saute them in the relish for 3 minutes. Then mix it into the rice The last 7 days were very eventful, in every sense of the word; and utterly amazing.
