Bruschetta with roasted tomatoes and creamy burrata

Our favourite recipe for hot days ! A crispy bruschetta with a generous topping ;-) We topped it with roasted tomatoes and add a creamy burrata on top ! Decorate it with some basil leaves and some pine nuts and you'll feel like you are in Italy ! Let's eat the best toast in the world ♥

- Wash the cherry tomatoes and put them in a dish. Add a drizzle of olive oil, salt, pepper, rosemary (fresh or dried) and a crushed garlic clove.
- Combine and bake for 30 minutes at 390°F (220°C). Grill the pine nuts in a hot pan until golden.
- Preheat the oven to 450°F on grill mode. Bake the bruschetta toast for 5 minutes.
- Put the roasted tomatoes on the grilled toast, add the burrata on top. Pour a drizzle of olive oil on the burrata and add some salt and pepper. Add the grilled pine nuts and some fresh basil leaves to decorate.
- There you are your bruschetta is ready !
Observations
We used a very large toast, you can make 2 toasts with these quantities.
