Bruschetta with roasted tomatoes and creamy burrata

Our favorite recipe for hot days! A crispy bruschetta with a generous topping ;-) We topped it with roasted tomatoes and added a creamy burrata on top! Decorate it with some basil leaves and some pine nuts, and you'll feel like you are in Italy! Let's eat the best toast in the world ♥

Wash the cherry tomatoes and place them in a baking dish. Drizzle with olive oil, add salt, pepper, rosemary (fresh or dried), and a crushed garlic clove.
Mix everything and bake for 30 minutes at 390°F (200°C). Toast the pine nuts in a hot pan until golden.
Set the oven to broil at 450°F (230°C) and grill the bruschetta bread for 5 minutes. You can also use sliced bread brushed with olive oil.
Place the roasted tomatoes on the grilled bread, add the burrata on top. Drizzle olive oil over the burrata, season with salt and pepper. Sprinkle with grilled pine nuts and place fresh basil leaves on top.
There you go, your bruschetta is ready!
Observations
We used a very large toast; you can make 2 toasts with these quantities! :-)
You can also present your appetizer like this: Transfer your roasted tomatoes to a bowl or a deep plate. Place your burrata on top. Add the pine nuts and fresh basil leaves on the tomatoes. Place salt, pepper, olive oil, and small slices of toasted (or fresh) bread on the side for a perfect shared appetizer!
