Boiled Potato Fry

IngredientsPotato 1 lbOnion 1 medium slicedCumin seeds 1/2 tspCurry leaves fewChilli powder 1 tspTurmeri powder a pinchGaram masala 2 tspAmachur powder 1and 1/2 tspSalt to tasteMethodBoil the potatoes (90%) and do not make it too soft n mushy..hard boiled potatoes,peel the skin and cut into bite size pieces and keep aside.Heat 1-2 tbsp oil in a pan,add cumin seeds wait till it splutter then add curry leaves and sliced onions.Ssute the onions for a minute and add the boiled and cut potatoes.Fry the potatoes nicely ,once in a while gently toss them.Once the potatoes are nicely fried and turn little crisp n brown add all the dry powders and enough salt.Mix everything well and fry in low heat till the masala leaves raw smell and the potatoes are nicely coated with the masala.Keep stirring and cook till the potatoes turn light crisp and turn off the stove.If u have some coriander leaves can add them now and leave it open in the stove..let it rest for few minutes.After that boiled potato fry is ready and serve as a accompaniment for rice/roti/puri etc.
