Lemon grass cake

similar to the taste of Lemon Cake except slightly sharper


Number of serving: 8

For the cake:

1/3 cup unsalted butter

1 cup caster sugar

2 cups self raising flour

3/4 cup milk

3 sticks of lemon grass

For the orange glaze:

juice of 1 orange

10g butter

1 tsp orange rind

1 tbsp sugar


  • For the cake
    Process/blend lemon grass with milk. Drain to remove the lemon grass residues.
    Cream butter and sugar till light and fluffy.
    Add eggs one by one and alternatively add flour and milk mixture.
    Beat on low spread to combine in.
    Onto a greased loaf pan, add the cake mixture.
    Bake on preheated oven (10 mins) for about 1 hour or until the cake is done.

    For the orange glaze:
    Simmer all the ingredients for a thick syrup.
    Once the cake is out of the oven, pour on top immediately.
    Let the cake cool down and then cut as the size preferred.
