- Cut up a lb of basa fish into small pieces and season it with white pepper and salt.
- You can also substitute for other firm fish fillet like cod, halibut, or red snapper.
- To make the wine sauce, add 1/4 cup white wine, 1/2 cup chicken stock, 4 teaspoons chili garlic sauce, 1 teaspoons minced garlic, 1 tablespoons light soy sauce, 1 teaspoons sesame oil, 2 teaspoons sugar, 2 tablespoons cider vinegar, and 2 teaspoons cornstarch (the thickening agent).
- Using a wok (or pan), add vegetable oil and cook the fish pieces about 1-2 minutes on each side until done. Then, set aside on a plate.
- In the same wok, add the wine sauce mixture and bring to a boil. Then add chopped green onion and cook until sauce has thickened.
- Finally, return the fish pieces back and coat evenly, making sure not to break the fish.
