Ingredients

Number of serving: 4
500 g chicken liver, trimmed , cut in half and patted dry

3 tablespoon olive oil

1 garlic clove , crushed

2 tablespoon balsamic vinegar

3 cups mixed lettuce, cut in medium - size

1 cup arugula leaves

Salt to taste

Crushed black pepper to taste


1) For dressing:

1/4 cup olive oil

1 tablespoon balsamic vinegar

Salt to taste

Black pepper to taste

Preparation

  • Heat olive oil in a skillet over high heat. Add liver. Saute until tender and brown.
  • Add garlic when the liver is almost ready. Season with salt and pepper. Add balsamic vinegar.
  • Remove liver from skillet and set aside. Boil cooking liquid for 3 minutes more.
  • 1) For dressing:
    Mix all the ingredients. Serve warm.
  • Combine lettuce, arugula leaves , chicken liver , dressing and warm cooking liquid just before serving.
