- Heat olive oil in a skillet over high heat. Add liver. Saute until tender and brown.
- Add garlic when the liver is almost ready. Season with salt and pepper. Add balsamic vinegar.
- Remove liver from skillet and set aside. Boil cooking liquid for 3 minutes more.
- 1) For dressing:
Mix all the ingredients. Serve warm.
- Combine lettuce, arugula leaves , chicken liver , dressing and warm cooking liquid just before serving.
