Remove the meat from the fridge 30 minutes before. Melt the butter and mince the garlic clove. Pour about half the olive oil into the bottom of a gratin dish and divide well. Place the pork on top.
Pour the remaining olive oil over the meat and the melted butter. Season with salt and pepper. Add the garlic and rosemary. Spread evenly with a brush (or your hands!).
Add the water to the bottom of the dish and then put the meat in the oven for 1 hour. Baste regularly and return to mid-heat.
Now, your roast pork is ready, you can accompany it with potatoes, carrots, mashed potatoes or even a salad! Enjoy!
