This often underestimated fish is nonetheless extremely tasty, especially when cooked in this way: a lacquering with Asian flavors to die for, for a sweet and savory blend. Preparation
- Remove the bones from the mackerel: remove the outer part containing the bones, then cut the fillet in half lengthways and remove the central part containing the bones.
Check that no bones remain. - Prepare the sauce:
Pour soy sauce, mirin, toasted sesame oil and honey into a saucepan. Mix well.
- When mixture boils, stir until syrupy.
- Place mackerel pieces in an airtight container. Brush the sauce over the mackerel pieces, close the container and refrigerate for 30 min to 1 hour.
- Place the mackerel pieces in a hot frying pan and sear for 1 to 2 min on each side, depending on the thickness of the pieces and the heat of the pan.
- Place the mackerel pieces on rice on a plate. Sprinkle with chopped chives and sesame seeds. You can also add sriracha if you like chilli!

The best way is to sear them for a few minutes on each side in a hot pan. The cooking time is fairly short, but will depend on the thickness of the pieces.

You can remove them before or after cooking. Here, we removed them before cooking. To do this, we removed the part containing the bones from the side and the central part of the fillet. Make sure you haven't missed any before moving on to the marinade!
