In a tagine dish, heat some olive oil and quickly sauté the chopped onion, then add the tomato pulp, chopped herbs, salt, pepper, and cumin. Mix and let cook on very low heat.
Kefta:
Put the ground beef in a bowl. Add salt, pepper, cumin, and paprika.In a blender, add the onion, garlic clove, and washed parsley and cilantro. Blend finely.
Add this mixture to the ground beef and mix well with your hands. Adjust seasoning if needed.
Form balls the size of ping-pong balls and place them on the tomato sauce in the tagine.
Cover and cook for 15 minutes on very low heat. After this time, open your tagine and crack the eggs over the meat. You can add as many as you like.
Close the tagine and cook for about 8 more minutes (check the cooking regularly to ensure the egg yolk remains runny).
And there you have it! Your Kefta Tagine is ready! Enjoy it with Moroccan bread or white rice.
Observations
Tagine dish: If you don't have one, replace it with a deep skillet.
Kefta: Feel free to prepare it a few hours in advance so that the meat absorbs the flavors of the spices and herbs. You can also find pre-made kefta at halal butchers. Here we used ground beef, but you can also use lamb or mix them.
Tomato pulp: You can replace it with the flesh of 4 tomatoes.
