- Remove leek ends and damaged leaves. Keep the white part and the softer green part. Clean, dry and chop.
- Add the olive oil to the pressure cooker and sauté the leek for 4 minutes. Stir occasionally.
- Add water and salt to the pot and cook the leeks. They will take 10 minutes to cook under pressure.
If you cook them in a casserole, the cooking time will be 20 minutes. - Drain as much of the leeks as possible and season with salt and pepper. You can also add nutmeg.
- Preheat oven to 390°F/200°C in natural convection mode. Transfer well-drained leeks to a gratin dish. Top with cheese slices, then ham. Finally, top with grated cheese.
- Place in the oven for 10 minutes at 390°F/200°C. Turn the oven to grill mode and bake for a few minutes, until the top is golden brown. The time will depend on your oven, so you'll need to keep an eye on the gratin.
Remove from the oven and voilà, your gratin is ready to eat!
Observations
You can add béchamel sauce for an extra touch of deliciousness!
Don't throw away the parts of the leek that don't look so good - you can keep them to make vegetable stock, for example! Don't hesitate to cut them into small pieces and freeze them if you don't need to use them straight away.
