- Cook the vegetables in just enough water till done.
- In a kadai,add the oil and sauté the onion paste till it becomes light brown.
- Now add the tomato paste and mix well.
- Saute for 5-7 minutes.
- Add the cooked vegetables and salt to taste.
- Cover and cook till the vegetables are coated with the masala.
- Garnish with coriander leaves and serve hot.
