Sesame noodle salad

1/2 pound linguini or asian noodles cooked

1cup snow peas, blanched

1/2 cup red and yellow pepper, cut in matchstick size strips

1/2 cup shredded carrots

1 cup shredded bok choy or nappa cabbage

2 cups cooked diced chicken or 1 pound cooked shrimp (optional)

3 tablespoons toasted sesame seeds

1/4 cup chopped cilantro


1/4 cup fresh orange juice

2 tablespoons honey

3 tablespoons soy sauce

1/4 cup rice vinegar

1 tablespoon sesame oil

1/2 cup vegetable oil

1/2 teaspoon red pepper flakes (optional)


  • To make the dressing, combine first five ingredients in a bowl. Slowly drizzle in oil while whisking. Add pepper flakes if want it a little spicy
  • Place pasta, snow peas, peppers, carrots, cabbage and chicken or shrimp if desired in a large bowl. Gently toss with some of the dressing. Cover and refrigerate for a few hours.
  • When ready to serve, add a little more dressing.
  • Garnish with fresh cilantro and sesame seeds.
